  • 60 g red onion, finely diced
  • 3 tbsp fresh cilantro, chopped

  • 1 clove garlic, minced
  • 1 medium roma tomato, diced
  • 0.5 tsp salt
  • 0.25 tsp ground cumin

The Only Guacamole Recipe You Will Ever Need

I have a controversial opinion: most guacamole recipes are way too complicated. People add yogurt, peas, pomegranate seeds, mango, all sorts of things that have no business being in guacamole. Great guacamole does not need fancy additions. It needs perfectly ripe avocados, fresh lime, and a few simple ingredients that let the avocado be the star.

This is the recipe I make for every single gathering, and it disappears within minutes. Every. Single. Time. I usually make a double batch now because one batch just leads to disappointment.

Picking the Perfect Avocados

The entire recipe hinges on this step. Choose avocados that yield slightly to gentle pressure, like the fleshy part of your palm when you press the base of your thumb. If they are rock hard, they will taste bland and be impossible to mash. If they are squishy, they will taste bitter and look brown inside. You want that sweet spot of perfectly ripe.

The Base

Cut 3 large ripe avocados in half, remove the pits, and scoop the flesh into a bowl. Add 2 tablespoons of fresh lime juice immediately. The acid does double duty: it adds brightness to the flavor and slows down the browning process.

Using a fork, mash the avocado to your preferred consistency. I am a chunky guacamole person. I want visible pieces of avocado, not a smooth paste. But you do you. Mash it however you like it.

Building the Flavor

Fold in 60g of finely diced red onion, 3 tablespoons of chopped fresh cilantro, 1 small seeded and minced jalapeno, and 1 minced garlic clove. Add half a teaspoon of salt and a quarter teaspoon of ground cumin.

Now taste it. The lime and salt should make the avocado flavor absolutely sing. Adjust as needed. More lime for brightness, more salt for depth.

Fold in 1 diced roma tomato last, and fold gently. You want the tomato pieces to stay intact, not dissolve into the guac.

Serve It Immediately

Guacamole is best the moment it is made, when the avocado is bright green and the flavors are fresh. Pile it in a bowl, surround it with warm tortilla chips, and watch it vanish. You can also use it as a topping for tacos, burgers, grilled chicken, or grain bowls.

If you absolutely must store it, press plastic wrap directly onto the surface of the guacamole, eliminating all air contact. Refrigerate and use within 24 hours.

Tina's Tips

  • Fresh lime juice only, never bottled. The difference between fresh-squeezed lime and that green bottle is enormous. Fresh lime has a brightness that bottled cannot replicate.
  • Start with less jalapeno and add more to taste. You can always add heat but you cannot take it away. Seed the jalapeno for milder heat, keep the seeds for more fire.
  • Red onion is better than white onion here. It has a sharper bite and a beautiful purple color that looks stunning against the green avocado.
  • Salt is the most important seasoning. Unsalted guacamole tastes flat and boring no matter how good your avocados are. Season it properly and the flavors come alive.
  • The plastic wrap trick really works. Air contact is what turns guacamole brown. Pressing wrap directly on the surface keeps it green for hours. Just peel it off and stir before serving.
