Samosas with Mint Chutney - appetizers recipe

Ingredients

  • 4 medium potatoes, boiled
  • 100 g peas
  • 2 cups flour
  • 1 tsp cumin seeds
  • 1 tsp garam masala
  • 2 green chilies, minced

Golden Pockets of Pure Joy

I learned to make samosas from my friend's mother, who insisted on folding each one while telling a story. There is something meditative about the process -- making the dough, cooking the filling, and carefully folding each triangle. And when they come out of the oil golden and crispy, the satisfaction is immeasurable.

The Filling That Sings

Boil potatoes until tender, then roughly mash them -- you want some chunks. Saute cumin seeds, green chilies, and ginger in oil until fragrant. Add the potatoes, peas, garam masala, coriander, turmeric, salt, and a squeeze of lemon. Let the filling cool completely before assembling.

For the dough, mix flour, salt, and a touch of oil, then add water gradually until a firm dough forms. Roll thin, cut into circles, and fold each one into a cone. Fill with the potato mixture, seal with a paste of flour and water, and deep-fry at 170°C/340°F until golden.

The Mint Chutney

Blend fresh mint, cilantro, green chili, lemon juice, and a pinch of salt until smooth. This bright, zippy sauce is the perfect counterpoint to the rich, spicy filling.

Tina's Tips

  • Cool the filling completely before assembling -- warm filling makes the dough soggy and impossible to fold
  • Fry at the right temperature -- too hot and the outside burns before the dough cooks through; too cold and they absorb oil
  • Seal edges tightly with flour paste so they do not open during frying
  • Make extras and freeze -- uncooked samosas freeze beautifully; fry directly from frozen, adding an extra minute
  • The chutney must be fresh -- it loses its vibrant flavor after a day, so make it right before serving
