Crispy Air Fryer Chicken Wings - appetizers recipe

Ingredients

  • 2 lbs chicken wings, split into flats and drumettes
  • 1 tbsp baking powder
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup hot sauce, for buffalo style
  • 3 tbsp unsalted butter, melted, for buffalo style

Shatteringly Crispy Without the Deep Fryer

I never thought I would say this, but the air fryer has changed my wing game forever. These come out with skin so crispy it practically shatters when you bite into it, while the meat stays juicy and tender inside. No deep frying, no oil splattering everywhere, no guilt. Just impossibly crispy wings that rival anything you would get from a restaurant or a sports bar.

The secret ingredient? Baking powder. Stay with me -- I promise it works.

The Prep That Makes All the Difference

Pat two pounds of chicken wings completely dry with paper towels. This is the single most important step for crispy skin, and I cannot emphasize it enough. Moisture is the enemy of crispiness. In a large bowl, toss the wings with a light drizzle of olive oil, one tablespoon of baking powder (not baking soda -- big difference), garlic powder, onion powder, smoked paprika, salt, and pepper.

The baking powder raises the pH of the skin, which helps it blister and crisp in the intense heat. It is a game-changing technique that works in the oven too, but the air fryer takes it to another level.

Air Frying in Two Stages

Preheat your air fryer to 195°C/380°F. Arrange the wings in a single layer -- this is crucial, no overlapping. Cook for 12 minutes, then flip every single wing. Bump the temperature up to 200°C/400°F and cook for another 8 to 10 minutes until the skin is deep golden brown, crackling, and absolutely gorgeous.

Sauce Them Up

Transfer the hot wings to a large bowl. For classic buffalo, toss with three tablespoons of melted butter and a third cup of your favorite hot sauce. For honey garlic, combine honey, soy sauce, minced garlic, and a splash of rice vinegar. For a simple dry rub, skip the sauce entirely and add an extra dusting of your seasoning blend. Whatever you choose, toss until every wing is evenly coated.

Serve Fast

Arrange the wings on a platter and serve immediately while the skin is at peak crispness. Offer celery sticks, carrot sticks, and a bowl of ranch or blue cheese on the side. Fair warning: these disappear fast, so consider doubling the batch.

Tina's Tips

  • Baking powder, not baking soda. This is not a typo. Baking powder creates that crackly, blistered skin. Baking soda will make your wings taste metallic and terrible.
  • Dry the wings thoroughly. I mean really dry. Pat them, then let them sit uncovered in the fridge on a rack for an hour before cooking. The drier the skin, the crispier the result.
  • Do not crowd the basket. Air needs to circulate around each wing. Crowding means steaming, and steaming means soggy skin. Cook in batches if you need to.
  • Flip every wing individually. Do not just shake the basket. Actually flip each wing so both sides get direct exposure to the hot air.
  • Sauce after cooking, not before. Sugar in sauces burns at high temperatures. Always cook the wings plain and sauce them after they come out.
