Ingredients
- 2 cans (400g each) chickpeas, drained and dried
- 2 tbsp olive oil
- 1 tsp smoked paprika
- 1 tsp cumin
- 0.5 tsp garlic powder
- 0.25 tsp cayenne, optional
- 1 tsp salt
I have tried every healthy snack trend and most of them taste like cardboard dipped in disappointment. These chickpeas are the exception. They are genuinely crunchy, genuinely tasty, and genuinely something you will keep reaching for.
The secret is getting them DRY before roasting. Pat them with paper towels, spread them on the baking sheet, and do not crowd them. Then high heat and patience. They need about 35 minutes to go from soft to crispy, and they continue crisping as they cool.
The spice mix is up to you — I have done smoky paprika and cumin, everything bagel seasoning, ranch, cinnamon sugar, and about a dozen other variations. They are all good.
Pro Tips
- Dry the chickpeas THOROUGHLY. This is the number one rule. Wet chickpeas = soft chickpeas.
- Remove the skins if you have patience. It makes them extra crispy. Rub them in a towel and the skins slip off.
- High heat: 200C/400F. Shake the pan every 10 minutes.
- Add spices AFTER roasting when they are still hot and slightly oily. The spices stick better.
Serving
Snack straight from the tray, scatter over salads for crunch, or put them in a bowl at a party. They keep for 3-4 days in an airtight container.
