Ingredients
- 225 g cream cheese, softened
- 120 ml ranch dressing
- 120 ml hot sauce, Frank's RedHot
- 300 g cooked chicken, shredded
- 200 g shredded cheddar cheese, divided
- 2 stalks green onions, sliced, for garnish
The Dip That Disappears
I am going to tell you something that will save you a lot of time: if you bring buffalo chicken dip to any gathering, you do not need to bring anything else. This dip is the great equalizer. It does not matter if it is a Super Bowl party, a casual potluck, or a fancy dinner party. The moment this bubbly, cheesy, slightly spicy dip hits the table, it becomes the only thing anyone wants to eat.
I have literally watched a room full of adults hover around this dish like it was the last source of food on earth. I have seen grown men guard it. I have been asked to make it for events where I was not even invited to attend. This dip has power, and I am giving you that power right now.
The Chicken
You can use rotisserie chicken for convenience, and I often do. Just pull the meat off, shred it finely with two forks, and you are good to go. If you want to poach your own, place boneless chicken breasts in a pot of seasoned water and simmer for 15 minutes until cooked through. Shred finely because smaller shreds distribute better throughout the dip and make it easier to scoop onto a chip. You need about 300g total.
Building the Dip
In a large bowl, beat 225g of softened cream cheese until smooth. Stir in 120ml of ranch dressing, 120ml of hot sauce (Frank's RedHot is the classic and the best choice), and half of the shredded cheddar cheese. Fold in the shredded chicken until everything is evenly combined. The mixture should be thick but spreadable.
Bake Until Bubbly
Transfer the mixture to an oven-safe baking dish or cast iron skillet. Top with the remaining shredded cheddar cheese. Bake at 175°C/350°F for 20 to 25 minutes until the dip is bubbly around the edges and the cheese on top is melted and starting to turn golden. If you want extra browning, flip on the broiler for the last 2 minutes. Keep a close eye on it under the broiler because it goes from golden to burned surprisingly fast.
The Slow Cooker Alternative
For parties, combine all the ingredients in a slow cooker on LOW for 2 hours, stirring occasionally. This method keeps the dip warm throughout the entire event without drying out. Give it a good stir before guests start dipping to recombine any oils that might have separated.
Serve With Everything
Set it out hot with an assortment of dippers: tortilla chips, celery sticks, carrot sticks, sliced baguette, or crackers. Garnish with sliced green onions, an extra drizzle of hot sauce, and crumbled blue cheese if you are feeling it.
Tina's Tips
- Frank's RedHot is the only correct hot sauce for this. Other hot sauces have different vinegar levels and heat profiles. Frank's has the specific tangy, buttery heat that defines buffalo flavor.
- Soften the cream cheese fully before mixing. Cold cream cheese leaves lumps that never smooth out, no matter how long you stir. Set it out for at least an hour before you start.
- Shred your own cheese from a block. Pre-shredded cheese is coated in anti-caking agents that affect how it melts. Block cheese melts into smooth, gooey perfection.
- Make it the day before and refrigerate unbaked. When you are ready, just pop it in the oven. This is a game day lifesaver because you are not scrambling last minute.
- Double the recipe. Always. I have never once made a single batch and had enough. Just go ahead and double it. You will thank me.
