The Casserole That Never Lets You Down
I am not going to pretend this is a fancy recipe. This is a casserole made with tater tots, ground beef, and cream of mushroom soup, and it is one of the most satisfying meals I know how to make. Every single time I bring this to a potluck or make it for my family on a busy weeknight, the dish comes back empty. There are no leftovers. Ever.
This is comfort food in its purest form. It is the kind of meal that wraps you in a warm hug and asks nothing of you in return except maybe a second helping.
Getting the Filling Right
Preheat your oven to 190°C/375°F and grease a 9x13-inch baking dish. In a large skillet over medium-high heat, brown 1.5 pounds of ground beef, breaking it into small crumbles as it cooks. Once there is no pink left, drain any excess grease. Add 1 diced medium onion and cook for 3 to 4 minutes until softened. Stir in 3 minced garlic cloves and cook for another 30 seconds.
Now add 2 cups of frozen mixed vegetables, a can of cream of mushroom soup, and half a cup of sour cream to the skillet. Season with 1 teaspoon of salt, half a teaspoon of pepper, and half a teaspoon of garlic powder. Stir everything together until well combined and heated through. The mixture should be thick and creamy and smell absolutely incredible.
The Assembly
Pour the beef mixture into the prepared baking dish and spread it into an even layer. Now arrange the frozen tater tots in neat, snug rows on top, covering the entire surface. I like to line them up in perfect rows because it looks satisfying, but honestly, you can just dump them on top if you are in a hurry. No judgment.
Into the Oven
Bake for 35 to 40 minutes until the tater tots are golden brown and crispy. During the last 5 minutes, sprinkle 2 cups of shredded cheddar cheese evenly over the top and return to the oven until the cheese is melted, bubbly, and irresistible.
Let the casserole rest for 5 minutes before serving. Garnish with chopped green onions or a dollop of sour cream. A simple side salad alongside makes this a complete meal, though I have been known to eat it solo straight from the pan.
Tina's Tips
- Use 80/20 ground beef for the best flavor. Leaner beef dries out in casseroles. You drain the excess fat anyway, so start with the good stuff.
- Arrange the tater tots in a single, snug layer. Overlapping tots means the ones underneath stay soggy. You want every single tot golden and crispy.
- Frozen mixed vegetables go in straight from the bag. No need to thaw them first. They cook perfectly in the oven during the bake time.
- Swap cream of mushroom for cream of chicken if you prefer. Both work beautifully. Some people even use cream of celery for a milder flavor.
- This freezes well before baking. Assemble the whole thing, cover tightly with foil, and freeze for up to 3 months. Bake from frozen, adding 15 to 20 extra minutes.
