Thick, Chewy, and Absolutely Addictive

Udon noodle stir fry — yaki udon, if we are being proper — is one of my absolute favorite quick dinners. Those thick, bouncy noodles have a chew that thin noodles simply cannot match, and they soak up sauce like little sponges. Toss them with crispy vegetables and a savory-sweet soy and sesame glaze, and you have a one-pan meal that is ready in under twenty minutes and tastes like it came from a Japanese restaurant. I am completely obsessed with this dish and I make it far more often than I probably should.

The beauty of this recipe is its flexibility. The noodles and sauce are the stars — the vegetables are just there to round things out, so use whatever you have in the fridge.

Noodles First, Sauce Ready

If you are using frozen or vacuum-packed udon noodles, boil them for just 1 to 2 minutes according to the package directions. Drain and rinse them under cold water to stop the cooking and remove excess starch. Gently separate any noodles that are sticking together and toss them with a teaspoon of sesame oil to keep them slippery.

Make the sauce so it is ready the moment you need it: whisk together three tablespoons of soy sauce, one tablespoon of oyster sauce, one tablespoon of mirin, one teaspoon of sesame oil, and one teaspoon of sugar in a small bowl. This combination gives you a beautifully balanced umami sauce with a touch of sweetness that caramelizes in the wok.

High Heat, Big Flavor

Heat two tablespoons of vegetable oil in a large wok or skillet over high heat until the oil just starts to shimmer. Toss in one sliced bell pepper, one cup of broccoli florets, and one julienned carrot. Stir-fry aggressively for about three minutes — you want the vegetables tender-crisp with a slight char on the edges, not limp and steamed. That char is where all the flavor lives.

Add two minced garlic cloves and one tablespoon of freshly grated ginger. Stir for thirty seconds until the whole kitchen fills with the most incredible aroma. Now add the cooked udon noodles and pour the sauce over everything. Toss vigorously with tongs for about two minutes, letting the noodles absorb the sauce and pick up some caramelized color from the screaming hot wok. If the pan looks dry, add just a splash of water to loosen things up — but not too much, or you will dilute the glaze.

Serve It Steaming

Divide among bowls and top with sliced green onions, a generous sprinkle of toasted sesame seeds, and a drizzle of chili oil if you like some heat. Serve immediately while the noodles are hot, glossy, and at their most irresistible.

Tina's Tips

  • Rinse the cooked noodles in cold water to remove excess starch and prevent them from clumping into a sticky mass in the wok
  • Get the wok screaming hot before the vegetables go in — the high heat is what gives you that slightly charred, restaurant-quality finish
  • Toss with sesame oil after draining to keep the noodles separate and slippery while they wait for the wok
  • Do not add too much water if the pan looks dry; a tiny splash loosens things up but too much turns your stir fry into soup
  • Add a fried egg on top for extra protein and richness — the runny yolk mixing into the saucy noodles is absolutely heavenly
