Date Night, Sorted
Duck breast sounds intimidating. It's not. If you can sear a steak, you can make this. The trick is starting in a cold pan — that's the secret to perfectly rendered, shatteringly crispy skin.
How to Make It
Score the duck skin in a crosshatch pattern without cutting into the meat. Season generously with salt and pepper.
Place skin-side down in a cold pan. Turn the heat to medium. Let it cook for 8-10 minutes as the fat renders and the skin gets impossibly crispy. Flip and cook for 3-4 minutes more for medium-rare.
Rest the duck for 5 minutes. In the same pan, add the cherries, wine, honey, and thyme. Simmer until the sauce reduces and becomes glossy — about 5 minutes. Finish with butter.
Slice the duck and fan over the cherry sauce.
Tina's Tips
- Cold pan start is the secret — don't preheat
- Save the rendered duck fat — it's liquid gold for roasting potatoes
- Medium-rare (57°C/135°F) is perfect for duck breast
- Swap cherries for orange or fig depending on the season
