Sunday Sauce Worth Waiting For
I firmly believe that a proper Bolognese cannot be rushed. This is not a quick weeknight tomato sauce -- it is a slow-simmered, deeply flavored meat ragu that rewards your patience with layers of richness you cannot get any other way. My version has been evolving for years, and I think it is finally perfect.
Building Depth, Layer by Layer
Start with a soffritto: finely dice onion, carrot, and celery and cook in olive oil over medium-low heat until soft and sweet, about 10 minutes. Add the ground beef and pork, breaking it up and browning thoroughly. This is where the flavor foundation lives.
Splash in some red wine and let it cook off completely. Add crushed tomatoes, tomato paste, a bay leaf, and a splash of whole milk. Yes, milk -- it tenderizes the meat and rounds out the acidity. Bring to a gentle simmer, partially cover, and let it cook for at least 2 hours, stirring occasionally.
The Union of Sauce and Pasta
Cook your spaghetti or tagliatelle until just shy of al dente, then finish it right in the sauce with a splash of pasta water. Toss until every strand is coated.
Tina's Tips
- Use a mix of beef and pork -- pork adds sweetness and tenderness that beef alone cannot deliver
- Splash of milk is the secret -- it mellows the tomato acidity and makes the sauce silky
- Low and slow -- two hours minimum, three is better, and overnight in a slow cooker is heavenly
- Finish pasta in the sauce with a ladle of starchy pasta water for a restaurant-quality coating
- This sauce freezes perfectly -- make a double batch and thank yourself later
