Homemade Cornbread - side dishes recipe

Ingredients

  • 1 cup cornmeal, fine or medium grind
  • 1 cup all-purpose flour
  • 1/4 cup sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 cup buttermilk
  • 2 large eggs
  • 1/3 cup butter, melted

Golden, Buttery, and Straight Out of the Oven

I grew up in a house where cornbread was not a side dish — it was an event. The moment that cast iron skillet came out of the oven, everyone gathered around the kitchen like moths to a flame. That golden crust, the steam rising when you broke it open, the way butter melted into every warm crevice. This recipe captures all of that magic, and I make it at least twice a month because life is simply better with cornbread in it.

There is a war between sweet and savory cornbread, and I have planted my flag firmly in the middle. This version has just enough sugar to complement the corn flavor without turning it into cake. It is tender, moist, and has that signature crumbly edge that makes you fight over the corner pieces.

The Cast Iron Method

Preheat your oven to 200°C/400°F and grease an 8-inch cast iron skillet generously with butter. Here is the trick that changes everything — pop that empty, greased skillet into the oven while it preheats. A screaming hot pan is the secret to that coveted crispy, golden crust on the bottom and edges. If you do not have cast iron, a regular baking pan works fine, but you will miss out on that incredible crunch.

While the oven heats, whisk together one cup of cornmeal (fine or medium grind — your call), one cup of all-purpose flour, a quarter cup of sugar, one tablespoon of baking powder, and half a teaspoon of salt in a large bowl. In a separate bowl, combine one cup of buttermilk, two large eggs, and a third of a cup of melted butter. The buttermilk is doing double duty here — it keeps the crumb incredibly moist while adding a subtle tang that balances the sweetness.

Pour the wet ingredients into the dry and stir until just combined. I cannot stress this enough — a few lumps are not just fine, they are preferred. Overmixing develops the gluten and turns your beautiful cornbread into a tough, dense brick. Stir until the flour disappears and then put the spoon down.

Carefully pull that hot skillet out of the oven and pour the batter right in. It should sizzle the moment it hits the pan — that is the sound of a perfect crust forming. Smooth the top gently and slide it back into the oven for 20 to 25 minutes until the top is gorgeously golden and a toothpick poked into the center comes out clean.

Serve It While It Is Still Warm

Let the cornbread cool in the pan for about five minutes — just long enough so you do not burn your fingers but not so long that it loses that fresh-from-the-oven warmth. Cut it into thick wedges right in the skillet and serve with a generous pat of butter, a drizzle of honey, or just pile it up next to a big bowl of chili and let it do its thing.

Tina's Tips

  • A hot cast iron skillet is the single biggest upgrade you can make — that sizzle when the batter hits the pan creates a buttery, crispy crust that is absolutely unreal
  • Never overmix the batter — stir just until the dry ingredients disappear and walk away, lumps and all
  • Buttermilk is non-negotiable — it keeps everything moist and adds a tang that regular milk simply cannot replicate
  • Fold in diced jalapenos and sharp cheddar for a savory version that pairs insanely well with barbecue
  • Day-old cornbread makes incredible croutons — cube it, toss with olive oil and herbs, and bake at 190°C/375°F until crunchy
