Homemade Taco Seasoning - side dishes recipe

Ingredients

  • 3 tbsp chili powder
  • 2 tbsp ground cumin
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 2 tsp smoked paprika
  • 1 tsp dried oregano
  • 2 tsp salt
  • 1 tsp black pepper
  • 0.5 tsp cayenne pepper

Ditch the Packet Forever

I am going to say something that might sound dramatic: making your own taco seasoning will genuinely change your taco nights forever. Once you taste the difference between fresh-ground spices mixed in your own kitchen versus that little packet of mystery powder from the store, you will never go back. I have not bought a taco seasoning packet in years, and my tacos have never been better.

The best part? It takes five minutes, costs almost nothing, and you can make a huge batch that lasts for months. You probably already have every single spice in your cabinet right now.

The Blend

Measure out 3 tablespoons of chili powder, 2 tablespoons of ground cumin, 1 tablespoon each of garlic powder and onion powder, 2 teaspoons of smoked paprika, 1 teaspoon of dried oregano, 2 teaspoons of salt, 1 teaspoon of black pepper, and half a teaspoon of cayenne pepper. Dump everything into a bowl and whisk until evenly distributed. That is it. You just made taco seasoning.

I know it seems too simple, and that is kind of the point. Those store-bought packets contain these same basic spices plus a bunch of fillers like maltodextrin, modified food starch, and silicon dioxide. Your homemade version is nothing but pure flavor.

Making It Yours

This is where homemade seasoning really shines: you can customize it endlessly. Want it milder? Skip the cayenne entirely. Want more heat? Double it or throw in some chipotle chili powder. Love smoky flavors? Go heavy on the smoked paprika. Some people add a teaspoon of cocoa powder or ground coriander for extra depth and complexity. Play with it until you find your perfect blend.

How to Use It

For ground beef tacos, brown about a pound of ground beef, drain the fat, and add 2 tablespoons of your seasoning with about a third cup of water. Simmer for 5 minutes until the sauce thickens and coats the meat. Same process works beautifully for chicken, turkey, pork, or even roasted vegetables.

But do not limit this to tacos. Sprinkle it on roasted potatoes. Stir it into sour cream for a quick dip. Dust it on popcorn. Mix it into scrambled eggs. This seasoning is a workhorse.

Storing Your Stash

Transfer to an airtight jar and store in a cool, dark place. It stays at full potency for about 6 months and remains perfectly usable for up to a year. Label the jar with the date you made it. One batch makes enough for approximately 6 taco nights, so double or triple it if you go through tacos as fast as I do.

Tina's Tips

  • Toast your spices in a dry skillet for 60 seconds before mixing. This one step deepens the flavor dramatically. Just swirl them over medium heat until fragrant.
  • Smoked paprika is the secret MVP. Regular paprika adds color but not much flavor. Smoked paprika adds that subtle, addictive smokiness that makes people ask what your secret is.
  • Scale up and make gifts. Pour the seasoning into small jars with a handwritten label and give them to friends. It is one of the most appreciated homemade gifts I have ever given.
  • Two tablespoons of seasoning per pound of meat is the magic ratio. More than that and it is overpowering. Less and it is bland. Two tablespoons is the sweet spot.
  • Keep a jar at work for sad desk lunches. Sprinkle it on a boring salad, rice bowl, or soup and suddenly lunch is interesting again.
