The Side Dish That Steals the Show

Every Thanksgiving, the turkey gets all the attention. But let me tell you a secret: the sweet potato casserole is the dish people are actually excited about. That creamy, warmly spiced filling topped with a crunchy brown sugar pecan streusel is so good it could honestly be dessert. And I know for a fact that some people go back for thirds of this and skip the pie entirely.

I make this every holiday season without fail, and it has earned a permanent, non-negotiable spot on the table. Try to remove it and there will be consequences.

Cooking the Sweet Potatoes

Peel and cube 1kg of sweet potatoes into 2-inch chunks. Boil in salted water for 15 to 20 minutes until fork-tender. Drain well and return to the pot. Alternatively, bake whole sweet potatoes at 200°C/400°F for 45 to 60 minutes for a deeper, more caramelized flavor. Baking concentrates the natural sugars and adds a subtle roasted note that boiling cannot match. I always bake when I have the time.

The Filling

Mash the hot sweet potatoes until smooth. Add 60g of softened butter, 100g of brown sugar, 80ml of whole milk, 2 eggs, 1 teaspoon of vanilla extract, 1 teaspoon of cinnamon, and a quarter teaspoon of nutmeg. Beat with an electric mixer until fluffy and creamy.

Taste it. The filling should be noticeably sweet but not cloying, because the streusel topping adds more sweetness on top. Adjust the sugar and spice to your preference.

The Pecan Streusel

In a separate bowl, combine 120g of chopped pecans, 75g of brown sugar, 45g of flour, and 45g of melted butter. Mix with a fork until you get a crumbly mixture with pea-sized clumps. This streusel topping is everything. The contrast of crunchy, buttery pecans against the creamy filling is what makes this dish legendary.

Bake Until Golden

Spread the sweet potato filling evenly in a buttered 9x13-inch baking dish. Sprinkle the pecan streusel evenly over the surface, pressing down just slightly. Bake at 175°C/350°F for 25 to 30 minutes until the topping is golden brown and the edges are bubbling.

Let it cool for a few minutes and serve. Watch it disappear.

Tina's Tips

  • Bake the sweet potatoes instead of boiling for richer flavor. Boiling works and is faster, but baking caramelizes the natural sugars and adds a depth of flavor that is worth the extra time.
  • Do not overbeat the filling. You want it smooth, not whipped into oblivion. Overbeating introduces too much air and changes the dense, creamy texture you are going for.
  • Make the filling and streusel the day before. Store them separately in the fridge and assemble just before baking. Add 10 extra minutes of bake time if the filling is cold.
  • Toast the pecans before adding them to the streusel. Five minutes in a dry skillet gives them a deeper, nuttier flavor that really comes through after baking.
  • Skip the marshmallow debate entirely. Some families are marshmallow families, some are pecan streusel families. I am a pecan streusel person and I am not apologizing for it.
