Classic Spaghetti Carbonara - main dish recipe

Ingredients

  • 1 lb spaghetti
  • 8 oz guanciale, or pancetta
  • 4 large egg yolks
  • 1 large whole egg
  • 1 cup Pecorino Romano, finely grated
  • 2 tsp black pepper, freshly cracked
  • for pasta water salt

Five Ingredients, Infinite Satisfaction

Carbonara is the dish that taught me the most important lesson in cooking: you do not need a dozen ingredients to make something extraordinary. Eggs, cheese, pork, pepper, pasta. That is it. Five ingredients, no cream (never cream), and a technique that turns them into one of the most luxurious, silky pasta dishes on the planet. Every single time I make this, I am reminded that simplicity is the ultimate sophistication.

If you can master carbonara, you can cook anything. I truly believe that.

Preparing the Egg and Cheese Mixture

In a medium bowl, whisk together four egg yolks and one whole egg. Add a full cup of finely grated Pecorino Romano and a very generous amount of freshly cracked black pepper. Whisk until you have a thick, creamy paste. This is your sauce, and it needs to be ready to go the moment your pasta is done. Carbonara waits for no one.

Rendering the Guanciale

Cut eight ounces of guanciale into small strips or cubes. Place them in a cold skillet -- cold, not hot -- and turn the heat to medium. Cook slowly, stirring occasionally, for 8 to 10 minutes until the fat renders and the pieces are golden and shatteringly crispy. Remove the pan from the heat and let it cool for a minute. If the pan is too hot when you add the pasta and eggs, you will end up with scrambled eggs instead of a sauce, and that is a tragedy nobody deserves.

The Crucial Toss

Cook one pound of spaghetti in very well-salted boiling water until just barely al dente. Before draining, reserve a full cup of that starchy pasta water. Add the hot drained spaghetti directly to the skillet with the guanciale and toss to coat everything in the rendered fat.

Now, working quickly and off the heat, pour the egg and cheese mixture over the pasta. Toss vigorously with tongs. The residual heat cooks the eggs into a velvety sauce without scrambling them. Add splashes of pasta water, a tablespoon at a time, while tossing until the sauce is glossy and flows like heavy cream.

Serve Immediately

Plate on warm bowls with extra Pecorino and a final flourish of black pepper. Eat it right away. Carbonara does not reheat, it does not wait, and it does not improve with time. It is perfect right now, in this moment.

Tina's Tips

  • No cream. Ever. Traditional carbonara gets its creaminess entirely from eggs and cheese. Adding cream is not carbonara -- it is alfredo with an identity crisis.
  • Use Pecorino, not Parmesan. Pecorino Romano is sharper and saltier, and it is the authentic choice. Parmesan is too mild and changes the character of the dish entirely.
  • Work off the heat. The number one carbonara mistake is adding the egg mixture over direct heat. Off the heat, tossing constantly, is the only way to get that silky sauce.
  • Guanciale over pancetta. If you can find guanciale, use it. The fat is more delicate and melts into the sauce in a way that pancetta cannot replicate.
  • Save more pasta water than you think. You might need it. A glossy carbonara depends on adding just enough starchy water to emulsify the sauce.
