A Bowl of Warmth and Spice
If I had to choose one meal to eat for the rest of my life, coconut curry would be a serious contender. The combination of creamy coconut milk, fragrant curry paste, and a rainbow of tender vegetables creates something that is simultaneously comforting and exciting. Every spoonful hits different — you get warmth from the ginger, sweetness from the coconut, a little heat from the curry paste, and brightness from the lime. It is the kind of dish that wraps around you like a blanket on a cold night.
I started making this recipe when I wanted to eat more vegetables without feeling like I was eating more vegetables. Mission spectacularly accomplished.
Building Layers of Flavor
Heat one tablespoon of coconut oil in a large, deep skillet or Dutch oven over medium heat. Add one diced medium onion and cook for 3 to 4 minutes until it softens and turns translucent. Stir in four minced garlic cloves, one tablespoon of grated fresh ginger, and three tablespoons of curry paste — red for more heat, yellow for a milder, warmer flavor. Cook this aromatic base for about a minute until the whole kitchen smells absolutely incredible and the paste darkens slightly.
Pour in one full can of coconut milk along with half a cup of vegetable broth. Stir well to dissolve the curry paste into the liquid. Add two tablespoons of soy sauce, one tablespoon of brown sugar, and two tablespoons of lime juice. Bring everything to a gentle, bubbling simmer.
Add one large diced sweet potato, two sliced bell peppers, and two cups of broccoli florets. Cover and let it cook for 12 to 15 minutes, stirring occasionally, until the sweet potato is fork-tender. The sweet potato adds this gorgeous natural creaminess to the broth as it cooks, making the whole curry richer and more velvety.
The Fresh Finish
Toss in one cup of snap peas and two cups of baby spinach during the last 2 to 3 minutes of cooking. The spinach will wilt down into the curry and the snap peas will stay bright green and slightly crispy — that textural contrast is everything. Taste the broth and adjust with more soy sauce for depth, more lime juice for brightness, or a pinch of salt if it needs it.
Ladle generously over steamed jasmine rice or cooked rice noodles. Garnish with fresh Thai basil, sliced red chili, chopped cilantro, and one more squeeze of lime. Serve it piping hot and watch everyone go back for seconds.
Tina's Tips
- Toast the curry paste in the oil before adding liquids — this blooms the spices and deepens the flavor dramatically compared to just dumping it in
- Full-fat coconut milk only — the light version makes a thin, watery curry that lacks all the richness and body
- Sweet potato is the secret MVP — it breaks down slightly as it cooks and thickens the sauce naturally while adding gorgeous color
- Add a tablespoon of fish sauce for an authentic umami punch that makes the whole dish taste more complex
- This tastes even better the next day once the flavors have had time to meld, so do not hesitate to make it ahead
