Classic Cobb Salad - salads recipe

Ingredients

  • 2 heads romaine lettuce, chopped
  • 2 large chicken breast, grilled, diced
  • 6 slices bacon, cooked, crumbled
  • 3 large eggs, hard-boiled, quartered
  • 1 large avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup blue cheese, crumbled
  • 3 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • 1/4 cup olive oil

The Salad That Eats Like a Meal

I used to think of salad as something you endured before the real food arrived. Then I discovered the Cobb salad, and my entire worldview shifted. This is not some sad pile of lettuce with a lonely cherry tomato — this is a composed masterpiece of grilled chicken, crispy bacon, creamy avocado, hard-boiled eggs, tangy blue cheese, and ripe tomatoes all arranged in beautiful rows over a bed of crisp romaine. Every forkful delivers something different, and it is honestly one of the most satisfying meals I know how to make.

Born at the Hollywood Brown Derby restaurant, the Cobb salad was supposedly thrown together from leftovers. If that is true, it is the greatest happy accident in culinary history.

Building Your Masterpiece

Season two large chicken breasts generously with salt, pepper, and a drizzle of olive oil. Grill or pan-sear them over medium-high heat for about 6 to 7 minutes per side until they are cooked through and have beautiful char marks. Let them rest for five minutes before slicing or dicing — this keeps all the juices inside the meat instead of running out onto your cutting board.

While the chicken cooks, get everything else ready. Hard-boil three large eggs by lowering them into boiling water and cooking for exactly 12 minutes, then plunge them into an ice bath. Peel and quarter them. Cook six slices of bacon until shatteringly crispy, then crumble them up. Dice one large ripe avocado, halve a cup of cherry tomatoes, and crumble half a cup of good blue cheese.

Now for the arrangement — and this part matters. Chop two heads of romaine lettuce and spread them across a large platter or wide shallow bowl. Arrange the toppings in neat, distinct rows across the top: a row of diced chicken, then crumbled bacon, then quartered eggs, then avocado, then tomatoes, then blue cheese. This presentation is what makes a Cobb salad a Cobb salad, and it looks absolutely stunning on the table.

A Vinaigrette That Ties It All Together

Whisk together three tablespoons of red wine vinegar, one teaspoon of Dijon mustard, a quarter cup of good olive oil, and a pinch each of salt and pepper. This simple vinaigrette is bright and tangy — the perfect counterpoint to all that rich chicken, bacon, and cheese. Drizzle it over the salad just before serving, or set it on the side and let everyone dress their own portion.

Tina's Tips

  • Arrange in rows for the classic look — then toss everything together at the table for the full experience of every ingredient in each bite
  • Dice everything to a similar size so that each forkful gets a little bit of everything; uniformity makes a huge difference in how this salad eats
  • Cut the avocado last to prevent it from browning, or give it a squeeze of lemon juice if you need to prep ahead
  • Swap blue cheese for crumbled feta or goat cheese if the funk of blue cheese is not your thing — both work beautifully
  • Leftover rotisserie chicken is a fantastic shortcut that saves you twenty minutes without sacrificing any flavor
