- 3 stalks green onions, thinly sliced

- 1 tsp Dijon mustard
- 1/2 tsp celery salt
- 1/2 tsp salt
- 1/4 tsp black pepper
The Secret to the Crunchiest Slaw
I have strong opinions about coleslaw, and I will not apologize for them. A truly great slaw is crisp, tangy, and just barely sweet — it should wake up your taste buds, not drown them in mayo. I spent years tweaking this recipe until it hit that perfect balance, and now it shows up at every single cookout, potluck, and fried chicken night in my house. It is the side dish that quietly steals the show every time.
I love that it takes about fifteen minutes from cutting board to fridge, and the longer it sits, the better it gets. There is something deeply satisfying about making something so simple taste so ridiculously good.
Toss, Dress, and Chill
Start by shredding your half head of green cabbage as finely as you possibly can. I am talking thin, wispy ribbons — a sharp knife works, but a mandoline is your best friend here. Thick, chunky shreds just do not absorb the dressing the same way, and you end up with bland bites mixed in with flavorful ones. Nobody wants that.
Peel and grate your two medium carrots on the large holes of a box grater. They add gorgeous color and a touch of natural sweetness that plays beautifully against the tangy dressing. Thinly slice three stalks of green onion and toss everything into your biggest mixing bowl.
Now for the dressing — whisk together 3/4 cup of mayonnaise, two tablespoons of apple cider vinegar, one tablespoon of sugar, one teaspoon of Dijon mustard, half a teaspoon of celery salt, half a teaspoon of salt, and a quarter teaspoon of black pepper. Taste it on its own first. It should be bright and punchy with just a whisper of sweetness. If it tastes flat, add another splash of vinegar. If it is too sharp, a tiny pinch more sugar will round it out.
Pour that glorious dressing over the shredded vegetables and toss everything together until every single strand is coated. Pop a lid on it and slide it into the fridge for at least thirty minutes. This resting time is not optional — it lets the cabbage soften just slightly and allows all those flavors to get to know each other.
Right Before You Serve
Give the slaw a really good stir before plating. The cabbage releases a bit of liquid as it sits, so everything needs to be redistributed. Taste it one more time and adjust — sometimes it wants another pinch of salt or a tiny squeeze of lemon to brighten things up.
Pile it high next to barbecue ribs, fried chicken, pulled pork sandwiches, or honestly just eat it straight from the bowl with a fork. I will not judge you. I have done it more times than I care to admit.
Tina's Tips
- Shred that cabbage paper-thin — thick chunks resist the dressing and give you an uneven slaw that nobody enjoys eating
- Make it two to four hours ahead for the absolute best flavor, but do not let it sit overnight or it turns into a soggy, watery mess
- A pinch of celery seed in addition to the celery salt adds a wonderful aromatic depth that people cannot quite identify but absolutely love
- Pat your shredded cabbage dry with paper towels before dressing — excess water dilutes your dressing and makes the whole thing thin and sad
- Swap in red cabbage for half the green cabbage if you want a slaw that looks absolutely stunning on the plate
