- 1/2 tsp paprika, for garnish
The Potato Salad That Started It All
I have a confession -- I spent years making mediocre potato salad before I finally cracked the code. The secret my grandmother kept from everyone? Seasoning the potatoes while they're still warm. That single trick changed everything for me.
Choosing Your Potatoes Right
Yukon Golds are my ride-or-die here. They hold their shape beautifully while still getting that creamy bite. Cut them into bite-sized chunks -- about 2cm pieces -- so they cook evenly. Boil in generously salted water until fork-tender, roughly 12-15 minutes.
The Warm Potato Secret
The moment you drain those potatoes, splash them with a little apple cider vinegar and a pinch of salt. Warm potatoes absorb seasoning like a sponge, and this step is what separates a forgettable side from the one everyone asks you to bring to every cookout.
Building the Dressing
While the potatoes cool slightly, whisk together mayonnaise, a touch of Dijon mustard, a squeeze of lemon juice, salt, and pepper. Fold in diced celery, red onion, and chopped fresh dill. I also add a couple of finely chopped hard-boiled eggs because that's how my family has always done it.
Bringing It Together
Gently fold the dressing into the warm-ish potatoes -- you don't want to mash them. Taste and adjust. Cover and refrigerate for at least two hours. It genuinely tastes better the next day.
Tina's Tips
- Season potatoes while warm -- they absorb the vinegar and salt so much better than cold potatoes ever will
- Use Yukon Golds for the perfect balance of creamy and firm; russets fall apart too easily
- Don't overdress -- start with less mayo and add more as needed; you can always add, never subtract
- Make it a day ahead for the best flavour development
- Add fresh herbs right before serving so they stay bright and vibrant
