🍛 Sri Lankan Dhal Curry
This is a staple on every Sri Lankan table — and once you taste it, you’ll understand why.
Dhal curry is one of those dishes that’s so humble, so simple, and yet so incredibly satisfying. Creamy red lentils swimming in coconut milk with curry leaves, turmeric, and a final crackle of tempered spices on top. It’s comfort in a bowl.
I make this at least once a week. It’s cheap, it’s nourishing, and it genuinely never gets old.
👩🍳 Instructions
1. Cook the lentils: Rinse red lentils and simmer with water, turmeric, and a pinch of salt until they break down and become creamy — about 15 minutes.
2. Add the coconut milk: Pour in coconut milk, add curry leaves, green chilies, and sliced onion. Simmer for 10 more minutes.
3. Season: Add salt and a squeeze of lime juice. The lime brightens everything up beautifully.
4. Make the temper: In a small pan, heat oil and add mustard seeds, cumin seeds, dried chilies, curry leaves, and sliced shallots. Fry until the seeds pop and the shallots are golden.
5. Pour the temper over the dhal: This sizzling crackle of spices is what elevates the whole dish. You’ll hear it sizzle — that’s the good stuff.
6. Serve: With steamed rice and other Sri Lankan curries for a proper rice and curry spread.
💡 Tips from My Kitchen
The temper is everything — don’t skip it. That final sizzle of spices transforms a simple dhal into something extraordinary.
Curry leaves are essential — dried ones work but fresh ones are a million times better.
It thickens as it sits — add a splash of water when reheating. It’s even better the next day.
