Snickerdoodle Cookies - desserts recipe

Ingredients

  • 230 g butter, softened
  • 300 g granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 410 g all-purpose flour
  • 2 tsp cream of tartar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 2 tbsp cinnamon, for rolling
  • 50 g sugar, for rolling

The Cookie That Smells Like a Hug

There is something about the cinnamon-sugar crackle on a snickerdoodle that makes everything feel right in the world. These are soft, chewy, and slightly tangy from the cream of tartar -- which is the ingredient that makes a snickerdoodle a snickerdoodle and not just a sugar cookie in disguise.

The Signature Crackle

Cream together the butter and sugar until light and fluffy, then beat in the eggs and vanilla. In a separate bowl, whisk the flour, cream of tartar, baking soda, and salt. Gradually mix the dry into the wet until a soft dough forms. Chill for at least 30 minutes -- this makes the cookies thick instead of flat.

Mix cinnamon and sugar in a small bowl. Roll tablespoon-sized balls of dough, then roll each one through the cinnamon sugar until completely coated. Place on a parchment-lined baking sheet and bake at 190°C/375°F for 9-11 minutes.

Pull Them Early

The cookies should look slightly underdone in the center when you pull them out. They firm up as they cool and end up perfectly soft and chewy. The tops should have those gorgeous crackly lines.

Tina's Tips

  • Cream of tartar is essential -- it gives snickerdoodles their signature tang and chewy texture
  • Chill the dough for at least 30 minutes to prevent flat, spread-out cookies
  • Pull them out early -- they should look underdone; they continue baking on the hot sheet
  • Roll generously in cinnamon sugar for maximum flavor in every bite
  • Double the cinnamon sugar mixture -- there is nothing worse than running out halfway through
