The Dessert That Disappears First
I have never once brought banana pudding to a gathering and brought any home. Not once. It is the dessert that people will openly fight over — creamy vanilla custard layered with sliced bananas and vanilla wafers, all topped with pillowy whipped cream. It is sweet, it is nostalgic, and it tastes like a hug from someone who loves you. This recipe makes the real deal — homemade custard from scratch, not a box of instant pudding dressed up with Cool Whip. You can taste the difference from the first spoonful.
I will be honest, making custard from scratch sounds fancier than it is. It is basically just stirring milk on a stove for ten minutes. If you can stir, you can make this.
Silky Vanilla Custard
In a medium saucepan, whisk together three-quarters cup of granulated sugar, one-third cup of cornstarch, and a quarter teaspoon of salt. Gradually whisk in three cups of whole milk, making sure there are no lumps. Set it over medium heat and cook, stirring constantly with a whisk, for 8 to 10 minutes. The mixture will start out thin and watery, then suddenly thicken into a gorgeous, pudding-like custard that coats the back of a spoon.
Pull it off the heat and stir in two tablespoons of butter, two teaspoons of vanilla extract, and three egg yolks, one at a time, whisking quickly after each addition so the yolks temper into the hot custard without scrambling. Press a piece of plastic wrap directly onto the surface of the custard — this prevents that annoying skin from forming — and let it cool for about fifteen minutes.
Layering the Pudding
Peel and slice five medium ripe bananas into quarter-inch rounds. Toss them gently with a tablespoon of lemon juice to keep them from turning brown. You want bananas that are ripe and sweet but still firm — overly soft bananas will dissolve into mush.
In a 9x13 inch dish or a big trifle bowl, start layering. Cover the bottom with a single layer of vanilla wafer cookies. Arrange a layer of sliced bananas over the wafers. Spoon a generous layer of warm custard over the bananas, spreading it all the way to the edges. Repeat this process — wafers, bananas, custard — two more times, finishing with custard on top.
The Whipped Cream Crown
In a chilled bowl, beat one and a half cups of heavy cream with three tablespoons of powdered sugar and a splash of vanilla until stiff peaks form. Spread this over the top of the pudding in big, dramatic swoops and swirls. Crush a few extra vanilla wafers and scatter them over the whipped cream for garnish.
Cover and refrigerate for at least four hours, or overnight if you can resist. As it chills, the wafers soften and meld into the custard, creating this incredible cake-like texture that is absolutely heavenly.
Tina's Tips
- Homemade custard is worth the effort — it tastes infinitely better than instant pudding and the texture is silkier and more luxurious
- Press plastic wrap directly on the custard surface to prevent that unappetizing skin from forming on top
- Use bananas that are ripe but still firm — mushy bananas disintegrate and make the layers sloppy instead of defined
- Overnight chilling transforms this dessert — the wafers soften into a cake-like layer and the flavors meld into something magical
- A splash of bourbon mixed into the custard makes an absolutely incredible adult version
