A Kashmiri Classic That Warms the Soul

Rogan Josh holds a deeply special place in my cooking journey. This was one of the original recipes in my World's Best Curries series, and developing it taught me so much about the power of slow cooking and layered spices. The name comes from Persian -- "rogan" means oil and "josh" means heat or intensity -- and that tells you everything about this dish. It is bold, deeply aromatic, and the kind of curry that fills your entire home with the most incredible smell for hours.

My family's version uses beef chuck instead of the traditional lamb, because I love how the long, slow simmer transforms those tough cuts into something impossibly tender and rich.

Searing for Depth

Heat a tablespoon of oil or ghee in a large, heavy pot over medium-high heat. Working in batches, sear 800 grams of beef chuck pieces until deeply browned on all sides. Do not crowd the pot -- the meat needs space to brown, not steam. Remove and set aside.

Building the Aromatics

In the same pot, add another tablespoon of oil and saute a sliced onion until golden and soft, about 6 to 8 minutes. Add three cloves of minced garlic and a tablespoon of minced ginger. Stir and cook for one minute until fragrant.

The Curry Paste Magic

Stir in three tablespoons of Rogan Josh curry paste and fry for 1 to 2 minutes. This step releases the oils and deepens the flavor of the spices dramatically. Reduce the heat to low and add five tablespoons of plain yogurt, one spoonful at a time, stirring constantly between additions. Adding it slowly prevents the yogurt from curdling.

The Long, Beautiful Simmer

Return the seared beef to the pot and pour in half a cup of water or beef stock. Stir well, making sure every piece of meat is coated in the sauce. Cover the pot and let it simmer on low heat for 1.5 to 2 hours, stirring occasionally, until the beef is fork-tender and falling apart. Add a splash more water if it gets too dry.

In the final 10 minutes, stir in half a tablespoon of garam masala and let it simmer uncovered to thicken the sauce.

Serve with Love

Garnish with fresh coriander and serve hot with steamed basmati rice or warm garlic naan. This is the kind of meal you serve to people you love.

Tina's Tips

  • Use room-temperature yogurt. Cold yogurt curdles instantly when it hits a hot pot. Let it sit out for 30 minutes before cooking, and add it one spoonful at a time.
  • Do not rush the simmer. Low and slow is the only way. The beef needs at least 90 minutes to become tender, and the sauce needs that time to develop its deep, complex flavor.
  • Sear in batches. Crowding the pot is the fastest way to ruin your sear. Brown the beef in two or three batches for proper caramelization.
  • Make it a day ahead. Like most curries, Rogan Josh tastes even better the next day once the flavors have had time to meld.
  • Add a splash of cream at the end. A tablespoon of cream or butter stirred in right before serving adds luxurious richness that rounds out the spice beautifully.
