Ingredients
- 1.5 kg chuck roast
- 1 packet (28g) ranch dressing mix
- 1 packet (28g) au jus gravy mix
- 115 g butter, 1 stick
- 8 whole pepperoncini peppers, from jar
- 60 ml pepperoncini juice
Five Ingredients, Zero Effort, All the Flavor
This recipe went viral on the internet for a very good reason: it uses five unlikely ingredients, requires absolutely zero cooking skills, and produces the most tender, flavorful, fall-apart pot roast you have ever had. The first time I made it, I genuinely could not believe something this easy could taste this good. Ranch seasoning, au jus gravy mix, butter, and pepperoncini peppers? Together? On a pot roast? It sounds bizarre, and it works spectacularly.
I now make this at least once a month during the cooler months, and it has become the recipe people request most when they come over for dinner.
The World's Easiest Assembly
Place a 3 to 4 pound chuck roast in your slow cooker. Sprinkle the ranch dressing mix and au jus gravy mix packets evenly over the top of the roast. Place an entire stick of butter right on top of the meat. Yes, a whole stick. I know. Trust me.
Scatter 8 pepperoncini peppers around and on top of the roast, and pour in about 60ml of the pepperoncini juice from the jar. The peppers add a mild, tangy heat that plays beautifully against the buttery richness of the sauce.
Set It and Forget It
Cover and cook on LOW for 8 hours or HIGH for 5 to 6 hours. Here is the only rule: do not open the lid during the first several hours. Every time you lift that lid, you release heat and moisture and add 20 to 30 minutes to the cooking time. Put the lid on, walk away, and let the slow cooker do its thing. Go live your life.
The roast is done when it falls apart with the gentlest nudge of a fork. And it will. It absolutely will.
Making the Gravy
Carefully lift the roast out to a platter. The liquid left behind in the slow cooker is your gravy, and it is incredible. For a thicker gravy, transfer the liquid to a saucepan, bring it to a simmer, and whisk in a cornstarch slurry of 2 tablespoons of cornstarch mixed with 2 tablespoons of cold water. Simmer for 2 to 3 minutes until it thickens up.
How to Serve It
Shred the beef with two forks and return it to the gravy to soak up all that flavor. Serve over creamy mashed potatoes, egg noodles, or with crusty bread for soaking up every drop. This also makes absolutely incredible sandwiches piled on soft rolls with a little of the gravy spooned over the top.
Tina's Tips
- Use a chuck roast, not a leaner cut. The fat and connective tissue in chuck is what breaks down during cooking and creates that melt-in-your-mouth texture. Lean roasts turn dry and stringy.
- Do not substitute banana peppers for pepperoncini. They look similar but the flavor is different. Pepperoncini have a specific tanginess that is essential to the recipe.
- The whole stick of butter is non-negotiable. I know it seems like a lot, but it melts into the sauce and creates that rich, velvety gravy. Do not reduce it.
- Leftovers are even better the next day. The flavors continue to develop overnight. Reheat gently in a pot with a splash of broth if it thickens up too much.
- This works in a Dutch oven too. Braise at 150°C/300°F for 3 to 4 hours instead of using the slow cooker. Same incredible results, slightly different timeline.
