Miso Soup - soups & stews recipe

Ingredients

  • 4 cups Water
  • 1 piece Kombu (dried kelp), 4-inch piece
  • 1 cup Bonito flakes, loosely packed
  • 3 tablespoons White miso paste
  • 6 ounces Soft tofu, cubed
  • 1 tablespoon Dried wakame seaweed
  • 2 stalks Green onions, thinly sliced

The Hug in a Bowl I Learned in Tokyo

I spent two weeks in Japan and ate miso soup at nearly every meal. What struck me was how something so simple could taste so deeply satisfying. The secret is all in the dashi and never, ever boiling the miso. This version captures that quiet, soulful warmth.

Building Flavor From the Bottom Up

Start by bringing water and a piece of kombu seaweed to a gentle simmer. Remove the kombu just before it boils, then add the bonito flakes. Let them steep for 5 minutes, then strain -- that is your dashi, and it is the backbone of everything.

Bring the dashi back to a gentle simmer. Add cubed silken tofu and sliced green onions. Ladle a bit of the hot broth into a small bowl, add the miso paste, and whisk until dissolved. Pour this back into the pot and stir gently.

The Golden Rule

Never let miso soup boil after the paste is added. Boiling kills the beneficial probiotics and turns the flavor harsh. Keep it at a gentle simmer and serve immediately.

Tina's Tips

  • Never boil miso -- it destroys the delicate flavor and the live cultures that make it so good for you
  • White miso is milder and sweeter; red miso is deeper and saltier -- I usually use white for everyday soup
  • Cut tofu into small cubes so each spoonful gets a piece
  • Add wakame seaweed for an authentic touch -- it rehydrates in minutes right in the broth
  • Make dashi in batches and freeze it -- having it ready makes miso soup a 5-minute affair
