🍲 Mulligatawny Soup

From the Tamil milagu tannir (pepper water) to a rich, creamy soup — this dish has traveled centuries and it’s still incredible.

Multigatawny is one of those recipes with a wild history. British colonists in India loved the spiced broths they were served, brought the concept home, and it evolved into this — a rich, warming soup with lentils, apple, and curry spices that’s become a classic in its own right.

🧭 About This Dish

The name comes from Tamil: milagu (pepper) and tannir (water). What started as a simple spiced broth was transformed by British cooks into a thick, hearty soup with cream, apple, and rice. It’s comfort food with a passport.

👩‍🍳 Instructions

1. Sauté the aromatics: Cook onion, carrot, celery, garlic, and ginger in butter until soft and fragrant.

2. Add the spices: Stir in curry powder, cumin, coriander, and turmeric. Cook for 1 minute — the kitchen will smell incredible.

3. Add lentils and apple: Toss in red lentils and diced apple. The apple adds a subtle sweetness that makes this soup special.

4. Pour in stock: Add chicken or vegetable stock. Bring to a boil, then reduce to a simmer for 25 minutes until lentils are completely soft.

5. Blend: Blitz until smooth and creamy. Return to the pot.

6. Finish: Stir in a splash of cream and season with salt, pepper, and a squeeze of lemon. Serve with a swirl of cream and naan for dipping.

💡 Tips from My Kitchen

The apple is the secret ingredient — it adds a subtle sweetness that balances the spices beautifully. Don’t skip it!

Blend it really smooth — this soup should be velvety and elegant, not chunky.

It’s even better the next day — the flavors deepen overnight. Make a big batch.
