🍜 Laksa (Malaysian Coconut Noodle Soup)
Curry laksa is Malaysia’s national comfort food — and one spoonful will tell you exactly why.
This soup is everything at once: spicy, creamy, aromatic, and deeply satisfying. A fragrant coconut curry broth loaded with rice noodles, shrimp, tofu puffs, and bean sprouts. It’s the kind of bowl you want on a rainy day — or honestly, any day.
🧭 About This Dish
Laksa comes in many forms across Southeast Asia, but curry laksa — the rich, coconut-based version — is the most famous. The laksa paste is the heart of the dish: a fragrant blend of lemongrass, galangal, chilies, shrimp paste, and turmeric that turns coconut milk into liquid gold.
👩🍳 Instructions
1. Make or use laksa paste: If using homemade, blend lemongrass, galangal, chilies, shallots, garlic, shrimp paste, and turmeric into a smooth paste. Or use a good quality store-bought paste.
2. Cook the paste: Fry the paste in oil for 3–4 minutes until fragrant and the oil starts to separate.
3. Add coconut milk and stock: Pour in coconut milk and chicken stock. Bring to a gentle simmer — don’t boil vigorously.
4. Season the broth: Add fish sauce, sugar, and lime juice. Taste and balance — it should be rich, spicy, and slightly sweet.
5. Prep the toppings: Cook rice noodles separately. Prepare shrimp, tofu puffs, bean sprouts, and hard-boiled eggs.
6. Assemble: Noodles in the bowl first, then ladle over the hot broth. Top with shrimp, tofu puffs, egg, bean sprouts, and fresh laksa leaves.
💡 Tips from My Kitchen
Good laksa paste makes or breaks this dish — if using store-bought, taste it and adjust with extra chili, lime, or fish sauce.
Don’t boil the coconut milk — a gentle simmer keeps it silky. Hard boiling makes it grainy.
Laksa leaves (Vietnamese mint) are traditional but regular mint works in a pinch.
