🔥 Lamb Vindaloo

This is not a curry for the faint-hearted. It’s fiery, tangy, and completely addictive.

Vindaloo has a reputation for being the hottest curry on the menu — and while yes, it brings the heat, the real magic is the vinegar. That sharp, tangy kick balanced against rich spices and tender lamb creates something you genuinely can’t stop eating.

🧭 About This Dish

Vindaloo originated in Goa, India, brought by Portuguese colonists. The name comes from vinha d’alhos — a Portuguese dish of wine and garlic. Over centuries, Goan cooks transformed it with local chilies, spices, and vinegar into the fiery masterpiece we know today.

👩‍🍳 Instructions

1. Make the vindaloo paste: Blend dried chilies, cumin, mustard seeds, peppercorns, turmeric, cinnamon, garlic, ginger, and vinegar into a thick paste. This is the soul of the dish.

2. Marinate the lamb: Coat lamb pieces generously with the paste. Cover and refrigerate for at least 2 hours — overnight is even better.

3. Sear the lamb: Heat oil in a heavy pot. Sear the marinated lamb in batches until browned on all sides.

4. Cook the onions: In the same pot, cook sliced onions until deeply golden.

5. Build the curry: Return the lamb, add any remaining paste, a splash of vinegar, and enough water to just cover. Bring to a boil.

6. Slow simmer: Reduce heat, cover, and simmer for 1.5–2 hours until the lamb is melt-in-your-mouth tender. Stir occasionally.

7. Serve: With steamed basmati rice to cool the fire.

💡 Tips from My Kitchen

The vinegar is what makes it vindaloo — don’t reduce it. That tangy bite is essential.

Marinating overnight makes a massive difference — the flavors penetrate deep into the meat.

Adjust the heat — use fewer chilies if you want warmth without pain. Use more if you’re a chili warrior.
