Gulab Jamun

Golden. Syrup-soaked. Impossibly decadent. India’s most iconic dessert — soft milk dumplings swimming in rose-cardamom syrup.

Gulab Jamun - desserts recipe

Ingredients

  • 200 g milk powder
  • 40 g flour
  • 2 tbsp ghee, melted
  • 300 g sugar, for syrup
  • 1 tbsp rose water
  • 4 cardamom pods, crushed
  • 1 pinch saffron

The Indian Dessert That Ruins All Other Desserts

I am not being dramatic when I say that gulab jamun is the most perfect dessert on earth. These soft, spongy milk-solid balls soaked in rose-cardamom syrup are so decadent that every other dessert feels like it is trying too hard. My first bite at an Indian wedding changed my dessert standards forever.

The Dough and the Fry

Mix milk powder, flour, baking soda, and a pinch of cardamom. Add ghee and just enough milk to bring it together into a soft, smooth dough. Do not overwork it -- a light touch keeps the jamun tender. Roll into small, crack-free balls about the size of a large marble.

Heat oil to 150°C/300°F -- lower than you think. Fry the balls in batches, turning constantly, for about 5-6 minutes until they are a deep golden-brown all the way through. The low temperature ensures they cook evenly without burning.

The Sugar Syrup Bath

While the jamun fry, simmer sugar, water, cardamom pods, rose water, and a squeeze of lemon until the syrup is slightly sticky. Drop the hot gulab jamun directly into the warm syrup and let them soak for at least 1 hour, ideally overnight.

Tina's Tips

  • Low frying temperature is critical -- if the oil is too hot, the outside burns while the inside stays raw
  • Roll without cracks -- smooth balls absorb syrup evenly; cracked ones fall apart
  • Soak for as long as possible -- the longer they sit in the syrup, the more flavor they absorb
  • Warm before serving -- gulab jamun are best served warm, gently reheated in their syrup
  • A drop of rose water in the syrup transforms the dessert from good to transcendent
