Fluffy Japanese Souffle Pancakes - breakfast recipe

Ingredients

  • 3 eggs, separated
  • 40 g flour, cake flour
  • 30 ml milk
  • 25 g sugar
  • 0.25 tsp cream of tartar
  • 1 tsp vanilla extract
  • 0.5 tsp baking powder

🥞 Fluffy Japanese Soufflé Pancakes

These are not regular pancakes. They’re jiggly, cloud-like pillows of joy that taste as good as they look.

If you’ve been on social media at all in the last few years, you’ve seen these — impossibly tall, wobbly, dusted with powdered sugar. They look like they should only exist in a Tokyo café, but I promise you can make them in your own kitchen.

Fair warning: the first batch might not be perfect. But even an imperfect soufflé pancake is better than a regular pancake.

👩‍🍳 Instructions

1. Separate the eggs: You need the yolks and whites in separate bowls. Make sure the white bowl is spotlessly clean — any fat and they won’t whip.

2. Make the yolk batter: Whisk egg yolks with milk, vanilla, and a touch of oil. Sift in flour and baking powder. Mix until smooth.

3. Whip the whites: Beat egg whites with cream of tartar until soft peaks. Gradually add sugar and beat to stiff, glossy peaks. This is the entire secret.

4. Fold gently: Fold the meringue into the yolk batter in three additions. Be gentle — you want to keep as much air as possible.

5. Cook low and slow: Pipe or spoon tall mounds onto a lightly greased pan over the lowest heat. Add a splash of water, cover, and steam-cook for 6–7 minutes per side.

6. Serve immediately: Stack them up, dust with powdered sugar, add butter, maple syrup, and fresh fruit. Eat fast — they deflate!

💡 Tips from My Kitchen

Low heat is critical — too hot and the outside burns while the inside stays raw.

Ring molds help — use metal ring molds on the pan to keep them tall and round.

They will deflate slightly — that’s normal! They should still be jiggly and fluffy inside. Serve immediately for maximum wow factor.
