Why Order Takeout When You Can Make This
I used to order chicken fried rice from the Chinese place down the street every single week until one day I decided to try making it myself. It took me exactly one attempt to realize I was never ordering it again. Homemade chicken fried rice is fresher, more flavorful, and honestly just as quick as waiting for delivery once you have the technique down. The crispy rice, the tender seasoned chicken, the pop of green peas and carrots — it all comes together in about fifteen minutes of active cooking.
This is one of those recipes I come back to every single week. It is endlessly adaptable, uses up leftover rice and whatever vegetables you have on hand, and it never gets old.
The Technique That Changes Everything
First things first — you need cold, day-old rice. I cannot stress this enough. Fresh, hot rice has too much moisture and will turn your fried rice into a sticky, steamy mess. Cook your rice the night before, spread it on a sheet pan, and refrigerate it uncovered. Those dried-out, individual grains are exactly what you want.
Dice two medium chicken breasts into small, bite-sized pieces and toss them with salt, pepper, and a splash of soy sauce. Heat a tablespoon of vegetable oil in a wok or large skillet over high heat until the oil is shimmering. Cook the chicken for 4 to 5 minutes, tossing occasionally, until it is golden and cooked through. Transfer it to a plate and set it aside.
Add another tablespoon of oil to the screaming hot wok. Toss in one diced medium carrot and half a cup of frozen peas. Stir-fry for about two minutes until the carrots soften slightly. Push all the vegetables to one side of the wok, crack two beaten eggs into the empty space, and scramble them quickly into small curds.
Now add all four cups of cold rice to the wok. Spread it out in a single layer and let it sit against the hot surface for about thirty seconds — this is where it picks up that incredible toasty flavor and slight crunch. Toss it, press it flat again, and repeat. After about three minutes of this, drizzle in three tablespoons of soy sauce and one teaspoon of sesame oil. Add the chicken back in along with two minced garlic cloves and a quarter teaspoon of white pepper. Toss everything together vigorously.
The Final Toss
Stir in three sliced green onions in the last thirty seconds of cooking and give it one final, dramatic toss. Serve immediately in big bowls while it is still steaming hot.
Tina's Tips
- High heat is non-negotiable — your wok should be smoking before a single ingredient goes in; this is what creates that signature wok hei flavor
- Day-old refrigerated rice fries up perfectly with separated, toasty grains instead of clumping together
- Season the chicken before it goes in the pan so the flavor is built into every bite, not just sitting on the surface
- Cook each component separately — chicken first, then vegetables and eggs, then rice — and bring them all together at the end for the best texture
- A tablespoon of oyster sauce added with the soy sauce gives the rice an incredible savory depth that makes it taste like it came from a restaurant
