The Cake That Sneaks Vegetables Into Dessert
Let me tell you something: carrot cake is proof that vegetables belong in dessert. I have been making this recipe for years, and every time someone takes a bite, they get this look on their face like they cannot believe how moist and flavorful it is. The combination of fresh carrots, warm spices, crunchy walnuts, and a cloud of tangy cream cheese frosting is genuinely one of the best things you will ever bake.
I make this for birthdays, holidays, and anytime I want to bake something that impresses without being fussy. It is a humble cake that punches way above its weight.
Mixing the Batter
Preheat your oven to 175°C/350°F. Grease and flour two 9-inch round cake pans and line the bottoms with parchment paper. In a large bowl, whisk together 2 cups of flour, 2 teaspoons of baking soda, 1 teaspoon of baking powder, 2 teaspoons of cinnamon, half a teaspoon each of nutmeg and ginger, and a pinch of salt.
In a separate bowl, whisk together 4 eggs, 1 cup of granulated sugar, half a cup of brown sugar, and 1 and a quarter cups of vegetable oil until smooth. Stir in 2 teaspoons of vanilla extract. Pour the wet ingredients into the dry and fold with a spatula until just combined. Do not overmix or you will develop the gluten and end up with a tough cake.
The Mix-Ins Are Everything
Fold in 3 cups of finely shredded carrots, 8 ounces of drained crushed pineapple, and 1 cup of toasted chopped walnuts. The batter will be thick and heavy, and that is exactly what you want. The carrots release moisture as they bake, creating that signature dense-yet-moist texture that makes carrot cake special.
Divide the batter between the prepared pans. Bake for 35 to 40 minutes until a toothpick inserted in the center comes out clean and the tops spring back when lightly pressed. Cool in pans for 10 minutes, then invert onto wire racks to cool completely.
Cream Cheese Frosting That Dreams Are Made Of
Beat 16 ounces of softened cream cheese and half a cup of softened butter together until completely smooth with no lumps. Add 4 cups of powdered sugar one cup at a time, beating well after each addition. Mix in 2 teaspoons of vanilla extract and a tablespoon of lemon juice for brightness. Beat on high for 2 minutes until it is fluffy, spreadable, and slightly tangy.
Assembly Time
Place one cake layer on your serving plate and spread a thick, generous layer of frosting on top. Add the second layer and frost the top and sides. Do not be shy with the frosting. Press extra toasted walnuts around the base for a classic, beautiful finish.
Refrigerate for at least 30 minutes before slicing so the frosting sets. This cake keeps beautifully for up to 4 days in the fridge, though I have never seen it last that long.
Tina's Tips
- Finely shred the carrots for the best texture. Large shreds do not break down enough during baking and create stringy pockets. The fine side of a box grater is your friend.
- Toast the walnuts before adding them to the batter. Five minutes in a dry skillet transforms their flavor from flat to rich and nutty. This small step makes a big difference.
- Cream cheese frosting must start with room-temperature ingredients. Cold cream cheese will leave lumps no matter how long you beat it. Set it out at least an hour before you start.
- A tablespoon of lemon juice in the frosting is the secret weapon. It brightens the flavor and balances the sweetness perfectly.
- Oil-based cakes stay moist longer than butter cakes. That is why carrot cake is still incredible days after baking. The oil keeps everything tender.
