- 4 cups vegetable broth
- 1 can (14 oz) diced tomatoes
- 1 large onion, diced
- 2 medium carrots, diced
- 2 stalks celery, diced
- 4 cloves garlic, minced
- 2 tsp cumin
- 1 tsp smoked paprika

- 1 pepper chipotle pepper in adobo, minced
- 1 whole lime, juiced
- 2 tbsp olive oil
- 1/4 cup cilantro, chopped
- 1 whole bay leaf
A Bowl of Pure Comfort
Black bean soup is the recipe I turn to when I want something deeply satisfying that comes together without a lot of fuss. It's hearty, smoky, and incredibly flavourful. After years of testing, I've found that the secret is in how you build the spice base.
The Aromatic Foundation
Sauté diced onion, carrot, and celery in olive oil until softened. Add minced garlic, ground cumin, smoked paprika, and a pinch of cayenne. Cook for about a minute until the spices bloom and your kitchen smells incredible. This step transforms the soup from flat to fantastic.
Simmering to Perfection
Add your black beans (I use three cans, drained and rinsed), diced tomatoes, and vegetable broth. Bring to a boil, then reduce to a gentle simmer for 25-30 minutes. The beans will start breaking down naturally and thicken the soup beautifully.
The Blend
Here's my favourite trick: use an immersion blender to purée about half the soup right in the pot. This gives you a thick, creamy base with whole beans throughout. If you don't have an immersion blender, scoop out two cups, blend in a regular blender, and stir it back in.
Finishing the Bowl
Stir in a squeeze of fresh lime juice -- it brightens everything up instantly. Ladle into bowls and load up your toppings: sour cream, diced avocado, chopped coriander, crumbled tortilla chips, and pickled red onion if you're feeling fancy.
Tina's Tips
- Bloom your spices in oil before adding liquid -- this unlocks so much more flavour
- Blend only half the soup for the perfect texture: creamy base with whole beans
- A squeeze of lime at the end is essential; it lifts the entire bowl
- This soup freezes beautifully -- make a double batch and thank yourself later
