BBQ Chicken - main dish recipe

Ingredients

  • 1.5 kg chicken pieces, bone-in, skin-on
  • 360 ml BBQ sauce
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • 1 tbsp olive oil

Backyard BBQ Chicken Done Right

I grew up around grills. My dad was the neighbourhood barbecue guy, and I picked up a lot from watching him. The biggest lesson? Patience. Great BBQ chicken isn't about blasting it with high heat and drowning it in sauce from the start. It's about building flavour in layers.

The Dry Rub

Mix together smoked paprika, garlic powder, onion powder, brown sugar, cumin, chilli powder, salt, and black pepper. Rub this generously all over your chicken pieces -- thighs, drumsticks, and breasts all work. Let the seasoned chicken sit for at least 30 minutes, or ideally overnight in the fridge.

Two-Zone Grilling

Set up your grill with a hot zone and a cooler zone. This is the most important technique for BBQ chicken. Start the chicken on the cooler side, skin-side up, and cook with the lid closed for about 25-30 minutes, flipping once. The indirect heat cooks it through gently without burning the outside.

The Sauce Phase

Only add your barbecue sauce in the final 10 minutes. Move the chicken to the hot side and brush with sauce, flipping and brushing every few minutes. The sugars in the sauce caramelise beautifully over direct heat, creating that sticky, lacquered finish. Internal temperature should reach 74°C/165°F.

Resting

Let the chicken rest for 5 minutes before serving. This is when I brush on one more thin layer of sauce for extra shine.

Tina's Tips

  • Season early -- overnight in the fridge gives the best flavour penetration
  • Use two-zone heat to avoid burning the outside before the inside is cooked
  • Only sauce in the last 10 minutes -- too early and the sugars burn into a bitter char
  • Check the temperature with a meat thermometer; don't guess with chicken
  • Let it rest for 5 minutes so the juices redistribute and the sauce sets
